Apprenticeship Celebration Awards - Guest Speaker, Olivia Cartlidge

Former Sous Chef Apprentice and Chef de Partie, Olivia Cartlidge, returned to speak at our Apprenticeship Celebration Awards on 12th May. Take a look at her speech!

I’m Olivia Cartlidge, a previous Young Apprentice of the Year winner. It’s a real privilege to be standing here with you today and also sort of a full circle for me. 

First of all, congratulations. Being in this room isn’t by chance, it’s a reflection of your hard work, your commitment, and your potential. Remember, tonight isn’t just about winning. Getting here already means you’ve achieved something special.

Two and a half years ago, I was in your position, unsure of exactly what I wanted to do, but certain I wanted to make a difference. So I made myself a promise: say yes to every opportunity. That decision changed everything. Life is all about perspective, you can do anything you put your mind to. 

With the support of my lecturers, I discovered the competitive side of hospitality, a world full of energy, passion, and drive. Since then, I’ve placed runner-up for the Nestlé Professional Toque d’Or, won a silver medal at HRC, and had the chance to become an ambassador and judge, sharing my journey with hundreds of others. 

But none of that could’ve been possible without the help of my incredible lecturer Mr Gabbitas. He believed in me and supported me when all I wanted to do was give up. His wise words, knowledge and commitment to every single one of his students is truly humbling and a real inspiration to all that know him. The world would be a better place with more people like Mr Gabbitas. This journey for me hasn’t been smooth sailing but he sure did make it a little bit more bearable and encouraged me to get away from toxic environments that made me question my worth. 

My apprenticeship opened doors I never imagined: from working with Michelin-star chefs to progressing into my current role as a Chef de Partie, where I now lead my own section and pass on what I’ve learned.

So my advice to you is simple: stay curious, work hard, and say yes, even when it feels scary. You’ve already taken a huge step by being here today.
