From mastering flavour profiles to representing her college at national competitions, Olivia Cartlidge has truly made the most of every opportunity that’s come her way during her Level 2 Commis Chef Apprenticeship with Apprenticeships+ at The Sheffield College.
With a passion for food and a hunger to grow, Olivia knew The Sheffield College was the right place to kick-start her culinary journey.
“The catering department at The Sheffield College is unmatched! The amount of technology, brilliant lecturers and skills are outstanding.”
That hands-on, industry-led environment has allowed Olivia to build not just technical knowledge, but also the confidence to step out of her comfort zone and into the spotlight, quite literally, as she competes in high-level national cookery competitions.
When asked about the most important skills she’s gained, Olivia was quick to highlight how her understanding of ingredients and teamwork have transformed her approach in the kitchen:
“I think gaining a basic knowledge of flavour profiles has been most beneficial, and it’s helped me so much in my competitions. For example, being able to create a dish with a good balance of flavours from a large variety of ingredients that have been given to you.
Also, I would say good teamwork, being able to work in a team seamlessly with new people is a great skill to have, especially in a busy kitchen environment.”
In an industry where pressure is high and collaboration is key, Olivia’s skill set is setting her up for long-term success. But she’s also quick to recognise the people who’ve helped her get there.
“I honestly could not have asked for a better lecturer and tutor. The amount of support and amazing opportunities is nothing short of incredible.
They’ve both pushed me out of my comfort zone and encouraged me to take every opportunity I get. It’s not very often you get a lecturer who cares about each and every one of their students like Andrew and Mary.
They truly have gone above and beyond, and I’ll be forever grateful — there’s not a chance I’d be where I am without them.”
Olivia’s Apprenticeship journey hasn’t just been about learning in the classroom or kitchen. Her employer has helped open doors to competitions and industry insights that go far beyond the everyday:
“Having the chance to go to different places to compete in national competitions has been a favourite of mine. These have been once-in-a-lifetime experiences, and it’s been phenomenal. Seeing so much passion, drive and ambition is just amazing to see in young people starting out in the industry.”
These experiences have fired Olivia up for what’s next and the possibilities are endless.
“Hopefully one day I’ll be living in a big city working in a really nice restaurant — or maybe owning my own. Who knows? The sky is the limit!”
And if you ask whether her Apprenticeship has prepared her for the next step? The answer is a resounding yes.
“Absolutely. I’ve learned, I’ve earned, and I’ve grown so much compared to the person I was just under two years ago. It’s incredible that you can learn so much in such a short time.”
